Got this recipe from Barefoot Contessa in Paris. It's really great if you are looking for filling comfort food that's not packed with carbs and meat. I'm not really much of a red wine person, but I had a glass with this and was quite a happy camper!

your illustrations are adorable! and the photography is so good! in italy they call this dish 'melanzane alla parmigiana' and i eat it all the time when i visit. it's classy enough for restaurants and weddings, but at the same time it's the best kind of comfort food to eat in your pj's :)
